Fish Bake With Pasta


Fish Bake Recipe - This dish goes a long way, a small portion can be filling and so satisfying.

Serves: 4
Preparation: 30 minutes

Ingredients:
150 g Monk fish (or Basa) fillets
150 g Cauliflower
100 g Twirl pasta
1 Sweet Pepper
3 Tomatoes
2 Small onions
1 Garlic clove
½ tsp Fresh oregano leaves (chopped)
½ tsp Fresh mint leaves (chopped)
Olive oil

  • Boil pasta and cauliflower for 2 minutes.
  • Drain, drizzle with olive oil and set to one side.
  • Meanwhile, blend chopped tomatoes with oregano, mint, 1 onion, garlic, salt and pepper until smooth.
  • Pre- heat oven to 220 degrees.
  • Peel remaining onion and de-seed pepper.  
  • Chop onion and pepper and place in baking tray, previously greased.
  • Cut fish fillet into small pieces (5 cm thick) and place on top of chopped onion.
  • Add pasta, cauliflower, tomato sauce and pour 100 ml water on top.
  • Bake in the oven for about 25 minutes.
  • Ready to serve.
