Cucumber Sandwich Recipe

The perfect healthy sandwich for lunch.

Serves: 2
Preparation: 10 minutes
Ingredients:
5 Bread slices
½ Cucumbers
½ Lemon zest
½ Carrot
8 Black olives
1 Pear
3 tsp Soya
butter
1 tsp Sour cream
1 tsp Tabasco sauce
1 tsp Freshly
chopped coriander leaves
1 tsp Worcester sauce
Pepper and salt
- Mix butter with Tabasco
sauce. Butter bread slices on one side.
- Spread sour cream on first bread slice.
- Add layer of wafer thin cucumbers slices.
- Season with salt and pepper.
- Add bread slice on top, add thin slices
of peeled pear.
- Add grated carrot.
- Drizzle Worcester sauce on top of
grated carrot.
- Cover with bread slice, add another
layer of cucumbers thin slices.
- Add coriander leaves and cover with
bread slice.
- Repeat the process and
season with salt and pepper.
- Cover with last bread slice.
- Remove bread crusts and cut into
triangle shape.
- Decorate with olive slices and lemon
zest.
- Ready to serve
If serving as tapas, cut sandwich into small triangle shapes before
decorating to avoid the tower falling apart.
Well worth the
time assembling it.
