Cucumber Coleslaw
Fried Bread With Cucumber Coleslaw Recipe
This is a Mediterranean interpretation
for coleslaw, also known as slaw.
In Portuguese it is called Salada Mista De Pepino E Cebola.

Serves: 4
Preparation: 20 minutes
Ingredients:
75g White cabbage (chopped in fine strips)
1 Medium red onion (finely diced)
150g Cucumber (finely chopped)
1 Medium Carrot (grated)
100g Light Mayonnaise
1 Free range egg (beaten)
1/2 Cup plain flour
4 slices of bread
300 ml vegetable oil
Watercress for garnish
Salt and pepper
- Mix chopped
cucumber, carrot, cabbage, onion with mayonnaise and season with salt and pepper.
Put in fridge for better results.
- Beat 1 egg in large soup plate and put flour in
another soup plate ready for dipping.
- Use a round pastry cutter to cut bread into large
slices.
- Heat oil in large frying pan for about 30 seconds
on medium high heat.
- Dip each bread slice into the egg mix then into
the flour.
- Once evenly covered fry it on each side
for about 30 seconds.
- Fry all bread slices first, then prepare the
serving dish.
- Put one slice of fried bread on serving dish, put
the same pastry cutter shape on top of the bread and
add coleslaw mix to form a similar circle and hold it together.
- Remove pastry cutter shape slowly and decorate
with watercress.
- Ready to serve.
I love the taste of cold salad with warm fried bread that just melts in your mouth!

Onions is an immune booster, contain Vitamin C, Quercetin and is an
excellent antioxidant. Also good for muscles. This ingredients is rich
in sulphur Thiosulfinate which is anti-inflammatory.
