Portuguese Creamy Cod

  Preparation: 25 minutes
    
    Ingredients:
    2 Large Cod fillets
    300 g Potatoes
    1 Onion
    1 Bay leaf
    2 Garlic cloves
    300 ml single cream
    300 ml milk
    1 Tablespoon olive oil
    1 Tablespoon of plain flour
    50 g Grated cheese
    ½ Nutmeg

  • Boil cod in milk for about 7 minutes. Remove cod, save remaining milk.
  • Peel and chop potatoes into small cubes (5 cm thick). 
  • Chop onions and garlic and stir fry.
  • Stir fry potatoes in olive oil for about 2 minutes. Add fish cut into small pieces (10 cm thick).
  • Re-heat the milk in separate pan and add flour, nutmeg, salt and pepper.  
  • Stir until sauce thickens. Add cream and stir gently for about 1 minute.
  • Pre heat oven at 220 degrees.
  • Place fried onions, potatoes and fish into baking dish.
  • Pour milk/ cream sauce over the potatoes and grated cheese over the dish.
  • Bake in the oven for 20 minutes.
  • Serve hot.
