Cod Portuguese Style - Bacalhau A Bras


Recipe for Cod Portuguese Style - Stir fried cod pieces with potato chips.  This recipe was created by a Mr Bras and originated in Lisbon, Portugal.

As popular in Portugal as fish and chips are in the UK.

Preparation: 35 minutes

Ingredients:
1 Medium onion
3 large cloves of garlic
500g cod fillet
1 Free range egg
1 kg of potatoes
1 Large bay leaf
1 tsp of paprika
5 tsp olive oil
Salt and Pepper

  • Wash, peel and fry potatoes into small chips and leave to one side.
  • Peel and fine chop onion and garlic.
  • Heat olive oil to large frying pan. Add onion, bay leaf and garlic to pan until soften and golden.
  • Remove fish bones and cut cod into small pieces, add to the pan.
  • Season with paprika, salt and pepper.  Gently stir for 1 minute.
  • Pour chips into the pan and stir for about 2 minutes.
  • Beat 1 egg and pour into the pan, stir quickly for 30 seconds, the egg will add moisture and help binding remaining ingredients.
  • Serve hot with salad.

Paprika is an antibacterial agent made from dry pepper Capsicum, it contains more Vitamin C than tomatoes. This ingredient can improve digestion and increase blood circulation.

Rocket salad contains folic acid, beta-carotene and Vitamin A and C. This ingredient helps prevent cancer.  Lowers risk of heart disease and strokes by reducing homocysteine levels (essential amino acid which also needs to be balanced).
