Vegan Coconut Rice
Vegan Coconut Rice Recipe - as tasty as it looks.

Ingredients:
20g Red Quinoa Seeds
50g Green Lentils
200g White Rice
50g Mushrooms
50g Frozen peas
20g Butter
30g Coconut powder
20g Sesame seeds
2 chillies
1
Tablespoon olive oil
1 Bay leaf
Salt
and pepper
- For best results, soak Quinoa, lentils and
rice for at
least 1 hour before cooking.
- Chop, then fry onion and chillies in olive
oil.
- Add sesame seeds, bay leaf and coconut
powder.
- Wash and add rice with Quinoa and lentils.
- Season with salt and pepper.
- Add 200 ml boiling water and stir regularly
for about 10
minutes.
- As rice dries out, add another 200 ml hot
water, repeat if
necessary.
- Chop mushrooms and add to the rice together
with peas, cook
for another 5 minutes or until rice is
cooked.
- Take off the heat and stir in the butter.
- Cover pan and leave for 2 minutes before
serving.
This
is a healthy vegan recipe full of flavour.
When
rice and peas are cooked together, one portion contains good
source of protein, iron and vitamin C.
This
ingredient contains folic acid, it can help treat asthma and promote
weight loss.
