Quorn Chili Wraps

Ingredients:
2 Soft flour wraps
½ Green sweet pepper
2 Small Quorn soya fillets
½ Small onion (chopped finely)
2 Table spoons of sour cream
2 chopped plum
tomatoes

Chili (de-seeded and crushed)
¼ apple ( peeled and
chopped)
½ lime juice
½ Avocado
1
Small garlic clove (crushed)
1 tsp mint leaves
(chopped
1 tsp fresh coriander leaves (chopped)
2 tsp
spinach leaves (chopped)
2 tsp apple cider vinegar
2 tsp
Olive oil
Pepper and salt
- To make life easier, chop all
ingredients as above indicated.
- Place wraps in the oven at 180 C
degrees (350 F/ Gas Mark 4 for 10 minutes.
- Chop Quorn fillets into small chunks (1
cm) and place in indoor grill (double plated) for 5 minutes or until
lightly grilled. If using broiler, grill for 2 minutes
each side.
- Meanwhile, in a mixing bowl, add
garlic, coriander, pepper, chili, onion, spinach, avocado, lime juice,
apple, mint and tomatoes.
- Season with salt and pepper.
- Spread 1 table spoon of sour cream in
each wrap.
- Add about 4 quorn pieces on top and 2
table spoons of the vegetable mix. Drizzle 1 tsp apple cider vinegar
over wrap.
- Roll wrap gently and serve.
Apple Cider vinegar brings balance to this snack, not the most popular
vinegar but it should be for its health properties alone.
