Carrot Soup Recipe


Carrot Soup Recipe- This vegan recipe is satisfying even for non vegans.

Preparation: 12 minutes

Ingredients:
1 Onion
4 Carrots
3 Potatoes
1 Garlic clove
½ tsp fresh ginger
1 Bay leaf
1 tsp olive oil
Salt and pepper to taste

  • Peel and finely chop onion, garlic and ginger and fry in deep pan with olive oil.
  • Add chopped carrots, potatoes and bay leaf.
  • Stir gently for about 2 minutes, add 500ml water and boil for about 4 minutes.
  • Blend until smooth. Season with salt and pepper.
  • Serve hot with basil leaves.
