Canja De Galinha


Here is a recipe for Canja de Galinha, Portuguese chicken soup, adapted vegetarian style using Quorn as an alternative to chicken.


Made with pasta soup shapes called Orzo, Rosa Marina, Risoni or Massa Pevide.  Shapped like large barley.

QUORN-SOUP

Serves: 2
Preparation: 20 minutes

Ingredients:
2 Quorn chicken style fillets
200g Risoni pasta
2 Fresh sage leaves
3 Garlic cloves
2 tsp Olive oil
Ground black pepper
Sea Salt

  • Chop Quorn fillets into small chunks and add to a hot deep pot pan with olive oil.
  • Stir fry on high heat for 30 seconds and add garlic cloves previously peeled and cut in half.
  • Gently stir for another 10 seconds and turn heat down.
  • Pour 1 litre hot water into the pot and add sage leaves.
  • Season with salt and pepper.
  • Allow to simmer for 10 minutes before adding pasta.
  • Simmer for another 5 minutes or until pasta is cooked.
  • Check seasoning and serve hot.
    A suggestion for a winter soup broth or to help you recover from a cold.

Orzo cooked on its own can be bland but with a bit of garlic, it is transformed into a     wonderful flavour.  If you are not a fan of garlic, that is ok, this pasta can soak the flavour of your favourite ingredient.

For this Canja De Galinha recipe, I have used sage but if you find Sage flavour to strong, it works very well with mint leaves. 

This Portuguese chicken soup was a peasant recipe going back to medieval times where a small portion of meat had to feed a large family.

Back in the old days, there was not birth control, it was not uncommon for a couple to have at least 10 children.  This soup was a way of making  1 chicken stretch to feed everyone.

Obesity was not a problem back then, that is for sure.  I have seen 1 person eat 1 whole chicken recently at a restaurant.  More and more chickens are being sacrificed not just because people like to eat chicken, it is because they like to eat a lot of chicken. 

Some meat eaters may not realize that they do not have to eat chicken for their protein source, there is just as much protein in Quorn.

I am a great fan of Quorn products as an alternative to eating meat.   Should be on commission for recommending Quorn products! 

Soya based products have come a long way, no longer taste bland or its texture is very similar to meat, make it easier to newly converted vegetarians like myself to stick to a vegetarian diet.
