Ingredients:
300g button baby mushrooms
200g rocket salad leaves
3 Table spoons plain flour
4 Medium onions
100ml olive oil
Salt and pepper
- Mix flour with warm
water until making a batter with the consistency of thick custard. Add salt and
pepper.
- Peel and slice onions. Dip into batter.
- Heat olive oil into frying pan, carefully place
each onion slice and fry for about 30 seconds on each
side. Drain and set to one side.
- Using the same pan, fry the mushrooms. Drain
and set aside.
- Place rocket in serving dish next to mushroom and
onions.
- Serve hot on its own or with a dip.
I love to get fresh mushrooms from the local market, the fresher the better, mushrooms take great even raw.
