is a simple lasagne recipe. A

Lasagne or Lasagna?
Lasagna is one sheet of lasagna pasta. Lasagne is plural for lots
of lasagna sheets.

Serves: 4
Preparation: 1 hour 10 minutes
Ingredients:
100g lasagna sheets
250 g fresh broccoli
200g grated cheese
1 Aubergine
1 Parsnip
1 Carrot
3 Garlic cloves
5 Fresh tomatoes (medium)
2 tsp
paprika
3 Table spoons olive oil
1 Table spoon white wine
1 tsp chopped fresh oregano
1/2 tsp chopped lemon thyme
1/4 tsp chopped fresh mint
- Slice Aubergine (leave skin on) into thin slices and place in baking
tray, previously greased with olive oil.
- Add a pasta sheets layer.
- Add peeled and sliced parsnip, carrot and chopped broccoli.
- Season with salt and pepper.
- To make tomato sauce, blend tomatoes, herbs, garlic, 2 table spoons of olive oil, wine, salt, pepper and 300 ml water
until smooth.
- Pour sauce over vegetables, cover with kitchen foil.
- Put in the oven for 1 hour at 220 degrees Celsius.
- Once cooked, add grated cheese and drizzle 1 table spoon of olive oil.
- Put in the oven for 2 minutes or until the cheese has melted.
- Serve hot.
