Bread Cake
Bread Cake Recipe -
You can use the same method for
blueberry muffins recipe by putting cake mix in muffin tins and only bake for 20 minutes.

Preparation: 1 hour
Ingredients:
100g Blueberries
350 Rice flour
200g Sugar
50g Coconut powder
100ml Soya Milk
3 Free range eggs
4 Slices commercial white bread
1 Table spoon soya butter
2 Table spoons vegetable oil
1/2 tsp Cinnamon powder
2 tsp Brown sugar
1 tsp Baking soda
- Turn oven on at 200 degrees Celsius.
- Whip egg whites and leave to one side.
- In a separate bowl mix egg yolks, sugar, milk, flour, coconut, cinnamon, baking powder, baking soda and vegetable oil.
- Blend bread dry into thick breadcrumbs and add to thick cake mix.
- Add egg whites and blueberries and fold gently.
- Grease cake tin with butter and pour in cake mix.
- Sprinkle brown sugar on top and bake for 40 minutes or until golden brown.
The end result should be a
moist fruit cake.
