Bolas Berlim Recipe- Bola
de Berlim is a traditional cake from Portugal, similar to Berliner in
Germany and Sonho in Brazil.

Serves: 12
Preparation: 2 Hours
Ingredients:
Egg custard:
100g Sugar
50 g Flour
300 ml milk
4 eggs
Dough:
500 g Flour
100 g Sugar
3 Table spoons
caster sugar
100 g
Butter
1 Lemon
3 Eggs
2 tsp yeast powder
1 tsp baking powder
1 L
Frying oil
75 ml milk
- Start by making the egg
custard. Use about 100 ml milk, add 100g sugar, 50 g flour, 1
whole egg and
3 egg yolks and mix well.
- Heat remaining milk and add egg
mixture
slowly and stir very regularly.
- Remove from the heat once thick
as
custard. Leave to one side to cool down.
- Add 500g flour, yeast, milk and
a pinch
of salt to a large bowl.
- Knock mixture together until
forming
dough.
- Shape into a large roll, make
some
incisions and leave to rest for 1 hour or until dough has risen.
- Knock dough and make hole in the
middle. Add ½ lemon zest, 3 beaten eggs and butter.
- Knock dough until butter is
incorporated in to the mix.
- Add a pitch of flour until
dough is
detached from bowl.
- Shape into a ball and leave it
to rest
for an hour or until doubling in size.
- Roll into sausage shape (7 cm
diameter)
and cut slices 3 cm thick and gently shape each
thick slice into
ball shape again.
- Place each ball into greased
baking
tray and leave to rest for about 10 minutes.
- Deep fry balls in hot oil for 30
seconds each side or until evenly golden.
- Remove from the hot oil
carefully and
drain excess oil using kitchen paper.
- Sprinkle with caster sugar and
allow to
cool down for a few minutes.
- Using thick syringe, inject egg
custard
cream into the middle of each ball or cut through the middle
to add
cream.
This
Portuguese cake is fried, sprinkled with sugar then filled with a sweet
egg custard using a thick syringe or large cut in
the middle.
In
Portugal, Bolas De Berlim are served in most Pastry shops and cafes.
