Butter Bean Stew
Bean Stew Recipe

Serves: 2
Preparation: 20 minutes
Ingredients:
250 g sliced Mushrooms
250 g butter beans (pre boiled)
300 g new potatoes (cut into quarters)
1 Red pepper
2 tomatoes
1 onion
2 Red chilies (medium heat)
1 tsp Paprika
1 tsp Piri piri
sauce
1 tsp chopped fresh dill
1 tablespoon
white port
1 tsp
olive oil
Salt and pepper
- Stir fry chopped onion with
olive oil
for about 2 minutes on low heat.
- De-seed, chop and add pepper,
chilies
and tomatoes.
- Add piri piri sauce, dill, white
port
and paprika. Stir gently.
- Pour 500 ml water and add new
potatoes. Bring to the boil for 5
minutes.
- Turn heat down and add mushroom
and
butter beans.
- Season with salt and pepper. Stir gently for about 3 minutes.
- Serve hot with bread to dip in.

I have adapted this
recipe to
vegetarian option by adding mushrooms.
Traditionally,
it is made with linguica
(Portuguese chourizo) and pork cuts.
