Baked Lentil Seeds Recipe

Ingredients:
200g Penne pasta (pre-boiled ardente)
2 Table spoons chopped sun dried tomatoes
2 Table spoon sweet chili sauce
2 Table spoons Peanut oil
2 Table spoons Red lentil seeds
2 Table spoons Flax seeds
1 Cup Baby carrots
1 Cup Baby sweet corn
1 Cup green French beans
1 tsp chopped mint leaves
1 tsp chopped chives
1 tsp chopped rosemary leaves
1/2 tsp garlic powder
1/2 tsp chili seeds
1 tsp arrowroot powder
500ml Tomato sauce
Salt and pepper

  • Heat oven at 200 degrees Celsius.
  • Add ingredients to a large baking tray (20 x 30cm).
  • Pour sauce over ingredients and stir gently.
  • Season ingredients with salt and pepper.
  • Bake for 30 minutes at 200 degrees.
  • Stir half way.  If sauce dries out to quickly, add 100ml water and stir gently before baking for the remaining time.

Lentils contain protein lectins, good for blood circulation.  High source of iron (to treat Anaemia), Vitamin A and C.  This ingredient promotes a healthy heart and immune system.  It can prevent cancer, reduces fatigue and signs of ageing.

Green beans lower blood pressure, promotes healthy heart and bones. Contains antioxidants to help balance cholesterol levels.  This ingredient is low in calories but high source of energy.

Carrots are great to enhance blood flow and function of the eyes.  Promotes weight loss, fights cancer, helps prevent constipation and protects the heart.  Carrots contain beta-carotenes.  Whilst the body converts beta-carotene into Vitamin A, this vitamin is essential for vision, growth and boosting your immunity.
