Baked Cod Recipe - a
Portuguese version of baked fish with pasta.
This is good food, full of flavour and so easy to make.

Preparation: 35 minutes
Ingredients:
300g Fresh mushrooms
3 Table spoons olive oil
2 Sweet red peppers
300g Pasta twirls
750g Cod fillets
1 Medium onion
2 Garlic cloves
1 Medium hot chili
1/2 lemon juice
1 tsp Fresh dill
1 tsp honey
1 tsp butter
Salt and pepper
Turn oven on at 210 degrees Celsius.
Boil pasta for 2 minutes. Drain and drizzle
olive oil to avoid sticking together. Put in a large baking
dish and leave to one side.
Seal cod fillets with 1 table olive oil, butter,
chopped chili and honey by light frying in a hot pan for
30 seconds on each side on medium heat.
Fish may flake out naturally into large
pieces. This is better than cutting with a knife. Add fish
including juices to the baking dish.
De-seed peppers and chop finely.
Stir fry peppers with mushrooms, olive oil,
crushed garlic and chopped onion for 10 seconds. Add to
the baking dish. This is done separately to help
preserve individual flavours.
Season with salt and pepper.
Drizzle lemon juice and mix ingredients together
but gently.
