Autumn Vegetables Stir Fry


Autumn Vegetables Recipe - A light dish full of flavour and excellent nutrients.

Preparation: 10 minutes

Ingredients:
250g  Cauliflower
250g Mange tout
200g Chestnut mushrooms
125g Oyster mushrooms
50g Coriander (fresh leaves)
8 Baby brussel Sprouts
1 Chili (medium heat)
1 tablespoon rice vinegar
1 tablespoon olive oil
1 tablespoon soy sauce
1 Small onion
Salt and pepper to taste

  • Steam cauliflower for 3 minutes, add sprouts and boil for 2 minutes.  Drain and leave to one side.
  • Chop onion finely and fry for 30 seconds with olive oil.
  • Add remaining ingredients and stir on high heat for 3 minutes.
  • Season with salt and pepper.
  • Ready to serve.

    Brussel Sprouts are a top provider of Vitamin C and can assist in the treatment of diabetes. This ingredient is also high in fibre and can aid in prevention of cancer.

    Coriander is a natural aphrodisiac and can help prevent migraines. This ingredient is a good source of minerals like potassium, zinc, calcium and iron.
